Wondering what on earth is "Kapampangan"? Well here is the answer!

Kapampangan

"Kapampangan" (kah-pam-pah-ngan) NOUN: The term used for the people of the province of Pampanga, Philippines .

Sinigang's characteristic flavor comes from tamarind which gives it a sour taste and overwhelms the taste of its meat.
